This no-bake watermelon flavor cake is light, refreshing, and packed with natural summer sweetness. It’s the perfect chilled dessert for warm days and family gatherings.
2 cups watermelon purée (reduced to 1/2 cup)
1 cup cream cheese, softened
1/2 cup Greek yogurt or coconut cream
1/2 cup powdered sugar
1 tsp vanilla extract
Juice and zest of 1 lime
1.5 cups graham cracker crumbs
5 tbsp melted butter
Fresh watermelon slices and mint (for garnish)
1. Reduce watermelon purée by simmering until thick (about 20–25 minutes), then cool.
2. Mix graham cracker crumbs and melted butter. Press into springform pan and chill.
3. In a bowl, beat cream cheese, yogurt, sugar, vanilla, and lime.
4. Stir in cooled watermelon reduction until smooth.
5. Pour mixture over crust, smooth top, and chill for 4–6 hours.
6. Garnish with watermelon slices, mint, and optional watermelon jelly layer.
Make sure the reduction is completely cool before adding.
For vegan option, use coconut cream and dairy-free crust.
