Description

These no-bake brownie balls are rich, chocolatey, and simple to make. With options like protein, date-based, and Elle Gibson’s famous variation, there’s something for everyone.


Ingredients

Scale

1 cup rolled oats

1/2 cup cocoa powder

1/2 cup nut butter

1/3 cup maple syrup or honey

1/2 cup protein powder (optional)

1/2 cup Medjool dates (pitted, for date version)

1 tsp vanilla extract

Pinch of salt

Optional: coconut flakes, crushed nuts, or chocolate chips


Instructions

1. In a food processor, blend oats and cocoa powder.

2. Add nut butter, maple syrup, and vanilla. Blend again.

3. If making the date version, add soaked dates and pulse until sticky.

4. Fold in protein powder or chocolate chips, if using.

5. Roll into small balls.

6. Coat with coconut, nuts, or cocoa as desired.

7. Chill for 20–30 minutes before serving.

Notes

Store in an airtight container in the fridge for up to 7 days.

Freeze for longer shelf life.
